   <title><![CDATA[Recipe: Old-Fashioned Cornbread Dressing]]></title>

   <description><![CDATA[ 1. Combine cornmeal, 2 eggs, buttermilk, and melted bacon drippings, stirring well. 
2. Place a well-greased 10-inch cast iron skillet in a 450 degree oven for 4 minutes or until hot. Remove skillet from oven; spoon batter into skillet. Bake at 450 for 35 minutes or until cornbread is lightly browned. Cool; crumble cornbread into a large bowl. 
3. Saute celery and onion in butter until tender. Add sautéed vegetables and remaining ingredients to crumbled cornbread, stirring well. Put dressing into a lightly greased 13 x 9 x 2-inch pan. Bake at 350 for 25 to 30 minutes. 
4. Yield 8 servings. 

Dressing may be stuffed into turkey cavity. Spoon any remaining dressing into a lightly greased 2-quart casserole; bake at 350 for 25 to 30 minutes. ]]></description>

In a large skillet, melt butter. Over medium-high heat, add onions and celery and cook until tender. Pour into a large mixing bowl, then add cornbread and bread cubes, plus all remaining . Mix well and spoon into baking dish. 

Bake 45-50 minutes or until golden brown.

   <description><![CDATA[ Preheat oven to 350 degrees F.  Spread bread cubes on a baking sheet and toast for 15 or 20 minutes, until lightly toasted. Heat a large non-stick skillet over medium heat.  Put celery and onion into skillet, cover, and allow to sweat for 5 minutes.  Add two Tbsp of the stock and stir to release any browned bits.  Simmer until liquid evaporates.  Add apples and two more tbsp of stock and simmer, stirring, until liquid evaporates.  Stir in sage, thyme, and ¼ cup of stock, cover, reduce heat to low, and simmer until apples are tender, 5 or 6 minutes.

Pour bread mixture into a large bowl, mix in cranberries, drizzle with remaining stock,  season with salt and pepper. Transfer to a 10-cup casserole, lightly coated with non-stick spray, cover, and bake in a 325 degree F oven for 35 to 45 minutes.

Add sunflower kernels or walnuts. cover and let stand off of the range burner at least 3 minutes.
