Potted Eggs with mushrooms:

Ingredients
. 6 eggs. 225g mushrooms (a mix of wild and cultivated is best), chopped
. 1 leek, sliced _nely
. 25g butter
. 1 clove garlic, crushed
. 200ml cream (or creme fraiche or a mixture of both)
. 100g grated cheese
. grated parmesan cheese for the top
Cooking Instructions
1. Butter 6 ramekins (or other small dishes) very well2. Heat the butter in a pan and fry the garlic, mushrooms and leeks. Cook at high heat so
that the mixture does not become too liquid. Season with salt and pepper and drain o_
any liquid if necessary in a colander
3. Divide half the cream between the ramekin dishes
4. Divide the mushroom mixture between each dish and then sprinkle with the grated cheese
5. Break an egg on top.
6. Season the remaining cream with salt and pepper and pour over the eggs
7. Sprinkle the parmesan cheese on top
8. Place on a baking tray and bake at 180 C for 15 minutes, then allow to cool for two
minutes before serving.
